I’m making two large trays of stuffed shells and baked ziti for Christmas. I want to assemble them on Christmas Eve day and put in the fridge overnight. Can I cook them safely the next day? All ingredients in the tray will be cooked {pasta, sausage, etc}.?
Thanks!
Cooking it the day before makes a lot of sense, why didn’t I think of that!
THANK YOU!
you sure can…. but when i make baked ziti, i actually bake it the day before and reheat it the following day…. it tastes even better the second day!

Here’s How I’ve done it for large parties in a proffesional kitchen. Cook all the ingredients you need first and chill them. You can undercook the pasta a little since the sauce will cook it more while heating. Once all chilled mix your ingredients and put in the pans your cooking them in, cover with parchment or plastic film and foil. Just put in the oven when you want but only at 250 degrees and slowly heat for an hour or so, uncover and top with the cheese your using and cook a additional 1/2 hour til cheese melts and reaches 165 degrees..
