I used Cremant and when I use champagne I don’t use the expensive stuff. But you’re really only adding a little so it doesn’t matter. And it is wild mushrooms with some champignon de Paris to add to it mostly because they contain more water which makes a nice sauce.

I wouldn’t call it “aux champignons sauvages” since you put “champignons de Paris” in it, but that’s a nice idea to stuff the chicken breasts and not only cook it with mushrooms and cream as I used to do (I’m French).
