I’m cooking for my mother and my brother tonight, and I was planning on making Apple Stuffing, stuffed Chicken Breast. I wanted a starch or grain and a vegetable/salad side, but I want it to taste good and fit with the dish. So what two side dishes would you recommend?
I have two good ideas for a salad:
Caesar Coleslaw
1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing
Toss first three ingredients together. Add enough dressing to coat. It’s even good the next day!
Cabbage Crunch Salad
½ head cabbage (or 1-2 pkg coleslaw mix)
4 green onions
2 T sesame seeds
½ cup slivered almonds
1 pkg Ramen Noodles, crushed
2 T sugar
1 pkg chicken flavoring, from noodles
½ tsp pepper
3 T cider vinegar
1 tsp salt
½ cup oil
Chop and set aside cabbage and onions. Toast in 350 oven the sesame seeds, almonds, and crushed noodles. For the dressing, mix together the sugar, chicken flavoring, pepper, vinegar, salt, and oil. 15 min. before serving, mix together the cabbage and onions with the dressing. Right before serving, add the toasted ingredients.

Brussel sprouts are really filling and a great side.
This is how I do them: half and wash them, saute in pan with olive oil, garlic and onion until they start to get a little soft pan into baking dish with some italian bread crumbs and spray with cooking spray bake until golden brown about half an hour at 350.
They are really great with a little balsamic vinegar.
